However, when you've used up all profiles "starting a new journey" once they've all been used up with saves, you are not given the option to start again or overwrite a save.
You can skip origin if you edit a certain file inside the game directory (and even skip using steam running the game executable there). You can then use steam to run it, but you need to use steam edit to associate the "originless" executable in steam client, but doing that is essentially useless because you don't have cloud saving and achievements.
